Spicy Seared Salmon with Curried Brown Rice + Green Chickpea Grains Recipe

Spicy Seared Salmon with Curried Brown Rice + Green Chickpea Grains Recipe

Ingredients

10 ounces of fresh salmon (cut into 2 pieces)

2 tbsps olive oil

Juice from 1/4 of a fresh orange

1 tsp sriracha

3 tbsps water

1 cup Daily Harvest Curried Brown Rice + Green Chickpea Grains

Handful of asparagus spears

Fresh cilantro for garnish (optional)

Dressing Ingredients:

1 tbsp tahini

1 tbsp apple cider vinegar

1/2 - 1 tbsp water to thin

1 tsp sriracha

Salt to taste

Instructions

For the dressing: Mix all dressing ingredients in a small bowl with a fork until well combined.

  1. Coat Salmon with 1 tbsp olive oil, fresh orange juice + sriracha.

  2. Wash and trim asparagus spears.

  3. Heat pan to medium heat and place salmon flesh side down. Cook for 4-5 minutes and then flip. Bake salmon in the oven at 350F for an additional 10 minutes until fully cooked.

  4. Add Daily Harvest Grains to a pan over medium heat, add water, and stir until combined. Cook for 4 minutes.

  5. Remove grains and add remaining 1 tbsp olive oil to the pan over medium heat. Add asparagus and cook for 5-7 minutes.

  6. Plate salmon, asparagus, and Daily Harvest Grains. Top with dressing + fresh cilantro.
