
Black Bean + Rice Breakfast Bowl Recipe

(makes 2 servings)
For the breakfast bowl:
2 cups of Daily Harvest Cilantro Brown Rice + Black Bean Grains
3 Tbsp water or vegetable stock
2 small roma tomatoes, diced
To serve:
Fried egg
Sliced avocado
Crumbled rioja (optional)
Fresh cilantro
In a small skillet over medium heat, combine Daily Harvest grains and 3 Tablespoons water.
Cook for 3 minutes, then add the diced tomato and cook for an additional 2-3 minutes until the tomatoes are softened and most of the liquid has evaporated.
Serve the Grains and tomato mixture topped with a fried egg, sliced avocado, fresh cilantro, and crumbled Rioja cheese. Add tortilla chips on the side to scoop.
