Soft Pumpkin Spice Chocolate Chip Cookies

Makes 8 cookies

6 tbsp butter
1/2 cup coconut sugar or light brown sugar
1 egg yolk
1/2 cup PSL cubes (~12 cubes), softened
3/4 cup flour
1/2 tsp baking soda
1/4 tsp salt
2 tbsp mini chocolate chips

Directions

Preheat oven to 375 degrees F.

Cream softened butter with sugar.

Add in egg until combined and 1/2 cup of PSL cubes that have been melted and cooled.

Mix til combined.

Add in flour, baking soda, and salt.

Gently mix in the mini chocolate chips.

Can scoop the cookies immediately or let rest in the fridge for up to a few hours.

Scoop into balls, place on a parchment-lined baking sheet and bake for 10-12 minutes
