Creamy Pumpkin Soup

Makes 1 serving

1 cup broth of choice1 medium potato of choice
1/2 cup cooked white beans
1/2 cup PSL cubes (~12 cubes)
Softened 1/2 tsp salt
1 tbsp toasted pumpkin seeds
1 tsp olive oil
Olive oil and pepper for serving

Directions

Heat 1 cup of your broth of choice with 1 diced potato and cooked white beans.

Once it reaches a simmer, cook for 10 minutes or until the potato is soft.

Add in 1/2 cup of PSL cubes and blend with immersion blender or in your blender until a creamy pureed soup is formed.

Season with salt and pepper, and top with a drizzle of olive oil and toasted pumpkin seeds, if desired.
