    Description

    We love kitchari, an Ayurvedic dish. Like the original, ours is spiced with ginger, garlic, cilantro, and turmeric, all balanced by creamy coconut. We stuck with traditional lentils (a source of protein), swapped basmati rice with cauliflower, then added spinach and carrots because we just love vegetables that much.

    Cauliflower

    A serving of cauliflower is an excellent source of vitamin C, which supports a healthy immune system, and a good source of folate, which helps maintain a healthy heart.

    Red Lentil

    Lentils are pea-sized powerhouses. A serving of lentils is high in fiber and makes a source of plant based protein.

    Carrot

    A serving of carrots is rich in vitamin A, which promotes eye health, and is a good source of vitamin K and fiber.

    Coconut

    Subtly sweet and nutty in flavor, coconut is the ultimate tropical fruit that brings a richness to recipes and makes a good source of dietary fiber.

    Spinach

    These leafy greens pack plenty of nutrient-dense punch with blood pressure-regulating potassium. Not to mention iron, calcium, magnesium, and vitamin K.

    Kitchari

    Our kitchari spice mix is made from brown mustard seed, cumin, turmeric, ginger, asafoetida (aka hing), and fenugreek for a soothing, warming flavor.

    How to prep

    1. 1 Remove film. For microwave (1100W), cook in this bowl or transfer to any microwave safe bowl of your choice. Add 2 tbsp of water or broth. Heat on high for 3 minutes. Stir. Heat for 1-2 additional minutes.
    2. 2 Follow directions carefully. Cook with care & do not leave unattended while cooking. Cook to an internal temperature of 165°F.
    3. 3 Enjoy with caution: contents may be hot.
    1. 1 Remove film. For stovetop, pour into pan, add 2 tbsp of water or broth, then break apart and disperse evenly in the pan. Cook over medium-high heat, stirring occasionally for 3-5 minutes.
    2. 2 Follow directions carefully. Cook with care & do not leave unattended while cooking. Cook to an internal temperature of 165°F.
    3. 3 Enjoy with caution: contents may be hot.
