Description

Kimchi, the Korean dietary staple made from fermented cabbage, is loaded with good-for-your-gut bacteria. Worked into fried rice, it packs a tangy, spicy punch. Cauliflower rice serves as a grain-free alternative that riffs on the staple take-out dish, with the added bonus of anti-inflammatory, cruciferous superpowers. (PS: This bowl gets even better topped with tofu or a fried egg).

Key ingredients

Cauliflower

A serving of cauliflower is an excellent source of vitamin C, which supports a healthy immune system, and a good source of folate, which helps maintain a healthy heart.

Kimchi

Kimchi is a spicy fermented cabbage that's a staple in Korean cuisine. Ours is made with napa cabbage, green cabbage, radish, carrot, onion, chili peppers, garlic, ginger, and sea salt.

Carrot

A serving of carrots is rich in vitamin A, which promotes eye health, and is a good source of vitamin K and fiber.

Tamari

Tamari is a type of Japanese soy sauce made from fermented soy beans. It’s often labeled as “gluten free soy sauce” and that’s essentially what it is.

Sesame

An ounce of these little seeds packs 6 grams of protein and 3 grams of fiber. You’ll also get dietary fat (the majority of which is mono and polyunsaturated fat), and a dose of iron, magnesium and zinc.

Gochugaru

That sweet, slightly smoky flavor that defines Korean cuisine all comes down to gochugaru, a crushed, dried chili pepper.

How to prep

  1. 1 Remove film. For microwave (1100W), cook in this bowl or transfer to any microwave safe bowl of your choice. Add 2 tbsp of water or broth. Heat on high for 3 minutes. Stir. Heat for 1-2 additional minutes.
  2. 2 Follow directions carefully. Cook with care & do not leave unattended while cooking. Cook to an internal temperature of 165°F.
  3. 3 Enjoy with caution: contents may be hot.
  1. 1 Remove film. For stovetop, pour into pan, add 2 tbsp of water or broth, then break apart and disperse evenly in the pan. Cook over medium-high heat, stirring occasionally for 3-5 minutes.
