Baked Salmon With White Bean + Spinach Pesto Pasta Recipe

Ingredients

2 salmon fillets - about 6 ounces each

2 tablespoons olive oil

½ teaspoon salt - or to taste

¼ teaspoon cracked black pepper

2 teaspoons minced garlic
-
1 teaspoon Italian herb seasoning blend

1 medium lemon

1 tablespoon capers
Instructions

Preheat the oven to 400 degrees and coat a large baking pan with olive oil or cooking spray. Arrange two salmon fillets on the baking sheet and season generously with salt and pepper.

Stir together the olive oil, garlic, herbs, capers, and juice of 1/2 of the lemon. Coat salmon with the mixture thoroughly.

Bake the salmon in the oven for 12-15 minutes or until the salmon is opaque and flaky when pulled apart with a fork. You can broil the last 1-2 minutes if desired.

While salmon is baking, prepare Daily Harvest White Bean + Spinach Pesto Pasta according to the directions on the packaging.

To serve, gently lay the finished salmon filet over bowl of cooked pasta. Spread a little excess pesto from pasta over salmon fillet and garnish with parsley and a squeeze of lemon.
