Kalamata + Artichoke Fonio
Inspired by: zesty olive & herb couscous
*Contains: Tree Nuts (Almond)
Description
Description
Our couscous starts with fonio—an ancient grain that provides iron. Kale, artichoke hearts, and great northern beans make this bowl an excellent source of fiber. Almonds add a bit of crunch, tangy vinaigrette adds that zing, and kalamata olives do their signature salty, briny thing.

Key ingredients
Kale
Brimming with antioxidants, iron, vitamin K, and fiber, kale is about as super as a food gets, with benefits to vision, detox, bone health, immune system, cholesterol levels, digestion, and more.
Great Northern Bean
A classic in soups and stews, a half cup of medium-sized Great Northern Beans is rich in fiber and folate and makes a good source of iron, magnesium, and plant-based protein.
Artichoke
Artichokes are extremely nourishing. A medium artichoke is an excellent source of fiber, folate and magnesium and provides a good source of potassium and iron.
Kalamata Olive
Kalamata olives are a specific variety of olive. They hail from the southern Peloponnese region of Greece—the city of Kalamata, to be exact. They have a rich, distinctive flavor. They’re sharp, yet a little less bitter compared to other varieties of olives, and they have a slightly fruity aftertaste.
Fonio
Fonio is a gluten free ancient grain; one serving provides a good source of iron, a mineral needed to carry oxygen in the body.
Almond
One ounce of almonds is rich in antioxidant vitamin E and makes a good source of fiber.
