When we want that cozy feeling that only soup can offer, this is our hearty (but not heavy) go-to. Sweet potato, cauliflower, and coconut create a velvety texture, lightly spiced with jalapeño and enriched with the deep umami flavors of white miso, tamari, and reishi and tamari mushrooms.

Sweet Potato
One medium sweet potato makes an excellent source of vitamin A to maintain eye health and a good source of fiber to help with digestion.
Cauliflower

Kelp
Kelp is an allstar vegetable of the sea; it's a nutrition powerhouse that also works hard to clean carbon from the atmosphere. A serving of kelp is also rich in magnesium, needed for energy production.
Reishi
The reishi mushroom is an adaptogen that has been shown to both boost the immune system and prevent cell mutation, with an added life span-extending bonus.
How to prep
- 1 Remove wrap and discard seal. Cook in this bowl or transfer to any microwave-safe bowl of your choice. Add 3/4-1 cup of coconut milk or broth. Heat on high for 3 minutes. Stir. Heat for an additional 2-3 minutes.
- 2 Make sure to follow directions carefully. Cook with care & do not leave unattended while cooking. Cook to an internal temperature of 165°F.
- 3 Enjoy with caution: contents may be hot.
- 1 Remove film. For stovetop, pour into pot, add 1 cup of water or broth, then break apart and disperse evenly in pot. Cook over medium-high heat, stirring occasionally for 4-6 minutes.
- 2 Make sure to follow directions carefully. Cook with care & do not leave unattended while cooking. Cook to an internal temperature of 165°F.
