Description
We’re big burrito fans here, so we created our own version of the Tex-Mex go-to. Our version is fiber-rich, paleo-friendly, and so satisfying. We started with familiar spices (like cilantro, garlic, mesquite, and chipotle), but swapped rice out for gluten-free quinoa. Quinoa is loaded with fiber and contains all nine essential amino acids, making it a complete protein. If you’re looking for more protein and extra authenticity, we have two words for you: black beans.

Key ingredients
Zucchini

Chipotle
Made from smoked and dried jalapeño peppers, chipotle chilies pack a punch of flavor and heat and a serving is rich in antioxidant vitamin C.
How to prep

- 1 For microwave (1100W): Remove tray from carton and discard seal. Cook in this tray or transfer to any microwave safe bowl of your choice. Heat on high for 3 minutes. Stir. Heat for an additional 1-2 minutes.
- 2 Follow directions carefully. Cook with care & do not leave unattended while cooking. Cook to an internal temperature of 165°F.
- 3 Enjoy with caution: contents may be hot.
